Chocolate Coconut Oat Balls

We are in prime snacking season. From summer camp lunch boxes to afternoons at the pool to car trips to the beach, so many of us are on the go. I am also so much more active in the summer, yet I don’t want to fuel up on something that’s going to weigh me down. That’s why I love little energy bites like these Chocolate Coconut Snack Balls.

They are made with wholesome, energizing ingredients: Quaker Old Fashioned Rolled Oats, whole wheat flour, chia seeds, coconut, chocolate sunflower butter, coconut butter, and vanilla. Mazen thinks they are cookies, and I’m just happy that they are made with real food! Of course, if you like your snacks on the sweet side, feel free to add a little honey, maple syrup or to roll these in chocolate! (Just note that you’ll need to adjust the water a little to account for the added liquid.)

(If you’re wondering why my coconut butter puddle is lightly brown, it’s because I melted it a little too much in the microwave! Toasted coconut butter anyone?!)

Ingredients

This recipe couldn’t be easier to make: dump everything but the water in a bowl. Mash. Add water. Roll. Done!

I used my clean hands to mix the dry ingredients and butters together – it’s easier than a spoon!

Next, add a few tablespoons of water until the mixture comes together. I ended up adding 2.5 tablespoons. Start with two and then add a wee bit more if you need it.

Roll the mixture into about eight balls. You can store them on your counter or chill them in the fridge. I like the texture when they’re chilled because the coconut butter hardens a bit and gives them a bit more chew.

Chocolate Coconut Oat Balls

Ingredients (8 balls)

  • 3/4 cup Quaker Old Fashioned Rolled Oats
  • 1/4 cup whole wheat flour
  • 2 tbsp dried coconut
  • 1/4 cup coconut butter, softened
  • 1/4 cup chocolate sunflower butter (or any other nut butter)
  • 1 tbsp chia seeds
  • 1/2 tsp vanilla
  • 2-3 tbsp water

Instructions

  1. Soften coconut butter in the microwave or a pot of warm water.
  2. Combine all ingredients except for water in a bowl and mix well.
  3. Add water one tablespoon at a time until mixture comes together into a dough.
  4. Roll dough into eight balls and chill in the refrigerator.
