I am so, so, so back onto coffee these days. Admittedly I think I feel best without the caffeine, but it just tastes so darn good (and it’s good for you! Antioxidants!) that I’m keeping things caffeinated for now. I’ve been French pressing with some of our local roasters’ coffee and usually have a little bit leftover that I put in the fridge for another day. That’s how this idea for cappuccino overnight oats came about.

I used my Nespresso Aeroccino to froth my milk, but you can use a hand-held frother (or even the microwave and a jar) to get your milk foamy.

Organic Valley sends me their newest products from time to time, and their latest is Grassmilk and Grassmilk Yogurt. These products are the best of the best: they’re made from cows that eat 100% grass and dried forages, they’re minimally pasteurized, and they’re non-homogenized. And of course they’re certified organic, so there are absolutely no antibiotics, synthetic hormones, toxic pesticides, or GMO anything!

While all Organic Valley milk is sourced from pasture-raised cows, the Grassmilk milk takes it one step further. Cappuccino Overnight Oats

Ingredients (Serves 1)

  • 1/3 cup rolled oats
  • 1 tsp chia seeds
  • Pinch cinnamon
  • Pinch kosher salt
  • 1/3 cup yogurt
  • 1/2 cup leftover coffee
  • 1 tsp sugar (optional)
  • 1/3 cup frothed milk

Instructions

Mix oats, chia seeds, cinnamon, salt, yogurt, coffee, and optional sugar in a jar. Chill for a minimum of 2 hours, ideally overnight. In the morning, froth whole milk and pour on top.
