Hi, guys! Happy Hump Day! I can’t believe it’s already 3:30 pm – today has totally flown by. Mal and I went to New Hampshire and back, which included nearly 4 hours in the car. Oy. At least we had some quality time together, right? The morning also flew by, so breakfast was grab-and-go: Cashew Collagen Balls x 3 + iced coffee with vanilla Ripple. After my recent post on keto for women , I got a lot of feedback. One of the most common themes: “But what about menopause?” I heard from dozens of women in both the comment section and in emails who were having trouble losing weight and dealing with the varied symptoms of menopause. Was keto the answer? Was Primal? Were they doing something wrong? Rather than start with the assumption that going keto or Primal is the best way to deal with menopause, I figured I’d start from ground zero, drawing on the extensive scientific literature on diet and menopausal symptoms to see if I could arrive at some general trends and make recommendations. Salad Of The Week

I always have greens, a bell pepper, a good cheese, and salad dressing on hand. But what varies on my lunch salads the most is the protein. If I have a good protein (like last week’s meatballs), I definitely eat more salads and find them so much more appealing! I have realized that I don’t love doing prep days in the kitchen on Sundays, which I would rather spend with family or out doing fun activities. (I also realize that working from home / blogging allows me to have flexibility in my prep day schedule!) Therefore, I have been doing some of my weekly prep at lunch on Monday and some dinner batch cooking during Monday dinner. I’ll dirty up the kitchen making lunch and then cook 1-2 things right after before cleaning everything up. This week my protein is a spiced chicken! I picked up an extra packet of organic chicken cutlets at Wegman’s last week and cooked them on Monday. I like cutlets or tenders because they are thin enough that they cook quickly in a pan.
