Sample Macro Day + Workouts to Try [Volume 4]

Hi, friends!

I can’t believe we are already into the third week of October! Crazy, right? Time flies during this time of year, especially when we have so many fun activities on the calendar. Every weekend has been jam-packed with fall adventures – everything from apple picking to corn mazes. October is definitely one of my favorite months of the year.

I also love, love, lovvvve the fall food scene! There are so many in-season items that I just can’t get enough of – as you’ll see throughout this blog post. Give me all of the apples, pumpkin, and winter squash recipes! 🙂 Just in case you’ve missed a few new fall recipe additions to CNC, head over to my recipe page!

I hope you enjoy today’s sample macro day – and don’t forget to check out the workouts. I added a fun fall fitness challenge that will definitely test your fitness level. It’s always nice to have a little motivation boost, so give it a try and let me know how it goes for you!

Breakfast: I made a batch of overnight oats with rolled oats, So Delicious blueberry yogurt, chia seeds, pumpkin seeds and a big scoop of my favorite Teddie peanut butter. I also had my usual iced coffee with vanilla bean collagen and unsweetened vanilla Ripple milk.

Lunch/Post-Workout: I fit in a CrossFit workout mid-morning and enjoyed my new favorite recovery shake: SFH Vanilla mixed with orange juice. After I got home, I threw together this bowl of greens, roasted carrots, Trader Joe’s wild-caught cod and a scoop of their awesome cowboy caviar.

Snack: I whipped up a batch of pumpkin spice protein balls for the blog and, of course, had to taste test them! Later in the afternoon, I also enjoyed a piece of millet zucchini bread with a spoonful of peanut butter. Sorry, I forgot to take a picture, but it was so tasty!

Dinner: This wasn’t the most photogenic dinner, but it tasted great! I had Trader Joe’s butternut squash spirals topped with a combo of nutritional yeast and garlic hummus. I’d definitely recommend giving this a try!

Dessert: I made sure to save a little room for an apple cider donut. I can’t get enough of these babies during the fall! 🙂

Workouts to Try

Fall Fitness Challenge Workout: I always think it’s fun to find a challenging workout to test yourself on. Try out this countdown workout, track your time, and try it again next month. It’s fun to see how much you can improve!

20-Minute Mini AMRAP Circuit: There’s no time to get bored during this quickie workout! I love AMRAPs because the time flies by, and it’s a fun race against the clock. Set your timer and GO!!

12-Minute Core Killer: If you are short on time, but still want to get in a great core workout no matter where you are, give this one a go. Get ready to plank in multiple ways!

Gym & Swim Days

Quinn and I have added a new activity to our Quinn and Mumma “gym days“… swim lessons! 🙂 Quinn was basically a fish all last summer and totally obsessed with being in the water, so it was definitely time to sign him up for lessons.

Our most recent gym day (Friday) started later than usual. It was gray and raining, so Quinn slept until a little past 7:00 AM. After that, we “dillydallied” (Quinn’s words) around the house, which included watching TV, drinking iced coffee, eating breakfast, and getting ourselves ready for the day.

My breakfast was quite delicious – I toasted up a couple of slices of bread and heated up a piece of 4-Ingredient Salsa Breakfast Bake to place inside for a quickie breakfast sandwich. It was awesome! I highly recommend it! 🙂

Once we got ourselves ready for the day, Quinn and I headed to CrossFit. (Quinn insisted on wearing his Crocs “for the pool.” Haha!)

The workout at CrossFit flew by. We worked on a heavy 2 Push Press and then went right into the WOD. I opted for dumbbells instead of the barbell and finished in 14:00.

After CrossFit, we swung by 1st Stop Coffee (an old favorite) for an iced coffee and a chocolate frosted sprinkle donut, which was realllllly tasty. Ever since Coffee Shack closed, we haven’t been able to find good donuts around here, but this one was excellent! 🙂

Then, we headed to Gold Fish Swim School for Quinn’s first lesson!

I had heard great things about Goldfish, and it definitely lived up to its reputation. It was so perfect for kids and the staff was super friendly.

Quinn’s first lesson went great. He was with an instructor as well as 3 other kids in the pool. I watched from the lobby, and he had the biggest smile on his face the entire time!

I’m so glad swim lessons are now part of our Fridays together! 🙂

Clean Eating Vegetable Curry Recipe

This clean eating vegetable curry could totally be my new favorite dish.

I’ve been plant based for about six months now. So far so good! But I do find that it’s much easier for me to fall into a rut. It’s been an interesting balance trying to find foods I can eat and that Mini Chef will actually eat. Add to that the fact that I’m also avoiding gluten at the moment and it makes dinner time a serious challenge.

As I write this, Mini Chef is on a week-long school trip, leaving me at home to eat whatever the heck I want. While I miss him terribly (yes, I was ugly crying when he left), I am using this week to really dive into trying new things. Foods that I like and don’t have to share!

Clean Eating Vegetable Curry Recipe

This one turned out amazing! I’m pretty sure it will become a staple on the weekends when Mini Chef is with his dad. Yum!!

RECIPE NOTES:

  • When this is first finished cooking, the spice is over the top. Let it sit for a few hours and the spice will calm down. It’s still a spicy dish though, FYI.
  • Make sure your potatoes are cooked through. That’s how you know it’s done.
  • Serve over brown rice, pasta or even quinoa!

CLEAN EATING VEGETABLE CURRY RECIPE:

Clean Eating Vegetable Curry

A deliciously spice curry you can enjoy over rice or even pasta!

  • 28 oz. can diced tomatoes ((no sugar added))
  • 2 cups diced potatoes ((1/4" dice))
  • 1/2 cup sliced carrots
  • 1/2 cup chopped red onion
  • 12 oz. package riced cauliflower
  • 6 medium garlic cloves
  • 2 tbsp. curry powder
  • 1 tsp. ground cumin
  • 1 tsp. ground turmeric
  • 1 tsp. ground ginger
  • 2 cups cooked chickpeas ((if canned, drain and rinse))
  • 13.5 oz. can light coconut milk
  • 1 cup golden raisins
  1. In a large skillet or pot, combine the diced tomatoes, potatoes, carrots and onions and bring to a strong simmer.

  2. Add in the riced cauliflower and spices as well as the coconut milk and cook until all the vegetables are cooked through.

  3. Stir in the coconut milk and chickpeas.

  4. When everything is completely cooked through, turn off the heat and stir in the golden raisins.

  5. Serve over a bed of brown rice.
