Gluten-Free Protein Pancakes for All

You guys might remember that we have quite the Sunday morning pancake tradition in our house. Even long before Quinn was born, Mal and I would make it a point to eat pancakes just about any weekend we had the opportunity to have a lazy morning. This family tradition has become so in grained in our weekend activities, we’ve started to plan our whole day around making pancakes (and bacon) for breakfast. As usual, Quinn was psyched to help make pancakes, and immediately started asking me to help him get the various supplies needed, including his step stool, favorite mixing bowl and a wooden spoon, which ended up being a bow staff a la Donatello from the Ninja Turtles. Bow staffs are no joke, and I almost lost an eye walking by! It’s a good thing that I had already had some iced coffee and dodged a wooden spoon to the temple! Hooray for pancakes!! This particular morning, we’re enjoying Pamela’s Gluten-Free Protein Pancake Mix . The brand sent me some of their pancake mixes to try.

Hello From Tranquility Bay

Greetings from the sunny Florida Keys! We’re here at the Tranquility Bay Resort in Marathon. The weather is dreamy and the resort is beautiful. Our travel day went as smoothly as it possibly could – thank goodness! I think all the planning + a little luck pulled us through. I am SO GLAD we decided to drive to Richmond for the direct flight. While it’s nice to have to Cville airport only 15 minutes from home, just having one flight made the whole day so much easier. I’m really glad we decided to check out stroller because we didn’t need it at the airport at all (in fact, it would have made things more complicated). And all of our gear was great – even with a really long walk to the rental car area. The drive from Miami to Marathon went well too. How I Take My Coffee (+ Ultimate Coffee Giveaway)

I’ve got another awesome success story coming up later this morning, but first…coffee. As I said on Friday, I take my coffee very seriously. So, no April Fool’s here. Just a great giveaway for any coffee lover out there… I’m not a breakfast eater as many of you know. As a result, my morning coffee is important to me. It’s a sensory experience I enjoy as well as a ritual that kicks off my day. Sure, the caffeine offers a little pick-me-up, but I make it count nutritionally with a collagen boost, too. I love Caveman Coffee, and it’s my favorite brand of beans to start with. After grinding those fresh (one of the great sensory pleasures of human existence), I pour them into my French press—the only way I make coffee. Once I add the hot water, I’ll let that sit for a couple minutes. In the meantime, I put one scoop of Vanilla Collagen Fuel in my cup and add just a bit of my prepared coffee—not quite a 1/4 cup.
