Vegan Cheese Sauce Recipe

This vegan cheese sauce recipe is delicious in mac and cheese, over nachos or even mixed into your morning oats with some salt and pepper for cheesy oats!

I’m not vegan anymore (I tried it, it didn’t work for me), but I do have a dairy allergy. So anything “cheese-based” has to be vegan for me. However, most vegan cheese products have ingredients in them that I just don’t want to eat. So I have learned to make my own in many cases. This sauce is just one of those substitutions in my kitchen.

This is not hard to make. Don’t let the timing on the recipe scare you. The eight hours is simply the soaking time for the nuts. Let them soak overnight while you sleep so they are ready to go the next day. Easy! After that, this takes no more than ten minutes to put together because all you are doing is blending everything together.

WHAT WILL YOU NEED TO MAKE THIS?

  • 2 cups cashews (soaked in water overnight)
  • 2 cups vegetable broth (no sugar added – low sodium is best)
  • 3 tbsp. nutritional yeast
  • 1 1/2 tbsp. ground turmeric
  • 1 tbsp. garlic powder
  • 1 tbsp. prepared yellow mustard (no sugar added)
  • 1 tsp. onion powder
  • 1 tsp. chili powder
  • 1/2 tsp. salt (I used pink salt)

As you can see, most of these ingredients are pantry ingredients. I keep my nuts in the fridge, but if you don’t, then this is entirely a pantry recipe! Great while we are all hunkered down under stay-at-home orders.

HOW DO YOU MAKE THIS VEGAN CHEESE SAUCE RECIPE

It’s a really simple process. I promise! Don’t let the overnight soak scare you off.

    • Just put the nuts in a large bowl, cover them with twice the amount of water, and set the bowl in the fridge overnight. When you’re ready to make your sauce, simply drain the nuts in a strainer and pour them straight into your blender with the other ingredients.
    • Adjust the salt to your liking. I add pepper too when I put this over oats.
    • If the sauce is too thick for your intended use, you can simply add more broth. You will most likely want to do this if using this on pasta for mac and cheese.

Note: This makes a big batch. You can cut it in half if you won’t use that much. This will keep in the fridge for up to 4 days. If you have several different intended uses, mix your broth in separately with smaller portions instead of just pouring it into the blender. Some recipes benefit from a thicker sauce.

Ingredients
