This year, amidst all the isolation and Zooming, I accepted the honor to serve as the Rising Community Leader in IBD for the New England Chapter of the Crohn’s & Colitis Foundation. I am extremely humbled at this opportunity to work alongside emerging leaders in the New England community to lay the platform for a future free of Crohn’s disease and ulcerative colitis, collectively known as Inflammatory Bowel Diseases (IBD). As you probably know, I have been deeply affected by ulcerative colitis and know firsthand how challenging these diseases can be for the 1 in 100 Americans living with IBD. I am proud to be honored at this year’s event along with New England’s Rising Healthcare Leader in IBD and serendipitously my amazing physician, Dr. Rachel Winter from Brigham & Woman’s Hospital. This Berry Trifle recipe is perfect for a healthy, Mother’s Day dessert, or for any special occasions when dessert must be enjoyed by all! Mother’s Day is upon us once again and few things go better on a Mother’s Day brunch table than a beautiful berry trifle. It’s a simple yet elegant dessert that everyone will enjoy. Trifle  (TRI-fuhl) – The word “ trifle ” comes from the old French term “trufle,” and literally means something whimsical or of little consequence. A proper English  trifle is made with real egg custard poured over sponge cake soaked in fruit and sherry and topped with whipped cream. ( source ) These days, trifles can be made much healthier. There are so many version out there, it can be hard to decide what type to make. But if healthier fare is what you’re after, than this version is delicious, light and satisfying. WHAT YOU WILL NEED: 16 oz. package of strawberries 12 oz. packages of blackberries (you can use raspberries instead or a mix of both) 32 oz.
