My favorite kinds of recipes are those where versatility shines. I love it when you can mix and match ingredients, customize it to your liking (because I always do!), or serve it as a light lunch or dinner side. This recipe fits those criteria. I found myself with a whole pumpkin and some extra farro that a friend gave me, and I put this together for an easy dinner. Rotisserie chicken completed the meal! I loved the mix of flavors from the salty feta, sweet roasted pumpkin (sweet potato or butternut would work great too!), chewy farro, and bright basil. Cutting open a whole pumpkin is never fun, but if you microwave it a bit it sure is easier. I do my best to cut it in half, and then place the cut sides down on a plate with a little water and microwave it until it’s tender enough to easily cut into chunks. Hi, guys! Happy Hump Day! So, I heard a rumor that you like to see what I eat in a day. And, truthfully, I also love to see what other people eat because it always gives me great ideas for my own food choices. And since macros are SO HOT right now, I wanted to share the macro breakdown of each of my meals and snacks. I don’t have any set number goals for them, but I try my best to make sure each is somewhat balanced between protein, carbs, and fat. I find those to be the most satisfying. This particular day was this past Monday, so you’ll see lots of Thanksgiving leftovers and some extra chocolate because my blog was attacked by malware for the second time in one week. We have a center here in Cville called Aquafloat  that offers floating, massages, and an infrared sauna. I’ve been wanting to try floating out for a while, and Thomas got me a combo massage + float gift certificate for my birthday. The float “pods” are filled with 12 inches of water heated to around 93.5 degrees – skin temperature. Dissolved into the water are 850 pounds of Epsom salts. Back in my public relations days, I used to work with the Epsom Salt Council, so I can tell you there are  hundreds of benefits to soaking in Epsom salts!
