Christmas Spirit and Christmas Spirits

Merry Christmas! Did you spot Santa? We did! I actually had some egg nog with him after bedtime. He likes the Virginia bourbon  I wanted to wrap up sharing our weekend in Hillsborough. I am already missing Miss Emmie! We had simple breakfasts both mornings – Cheerios with PB and banana one day and the same in bread form the next with pineapple slices. Thomas and I went for a run on the Riverwalk, and then we walked downtown with Mazey for a later lunch at Radius Pizza. Do you see the mischief in those eyebrows?! We shared a spinach salad and a Frontier pizza with bison and blue cheese. We walked by my friend Kirsten’s house to catch up with her for a bit and then walked a few blocks more to my old house to say farewell to my old bedroom. I might see it again, but I said goodbye just in case. It sure was empty!! We spent the afternoon playing games – Connect Four and Monster Mash – and catching up with old friends. That evening we went to a family friend’s house for...

Happy Holidays

Ho Ho Home

^^Santa is always watching!  Merrrrrrry Christmas Eve! We just spent the weekend in Hillsborough visiting my parents, sister and family. My parents are s l o w l y moving from the house I grew up in to a new house in their same neighborhood. They now have beds and mattresses at the new house, so we were able to stay there for the first time! It was SO NICE to have plentiful bathrooms (growing up we just had one for the whole family upstairs) and modern touches like their gas fireplace. Now that Emerson can walk, Mazen had fun chasing her around and making her laugh. Where’s your cousin?! Check out the open floor plan! (Rugs, kitchen tables, etc. all still in progress.) MY OTHER RECIPES I brought some Virginia wine to share, and we snacked in cheese, crackers, guac and chips before dinner. My parents made chili in the slow cooker, cornbread and salad for dinner. After dinner we opened gifts! We always do a Secret Santa exchange, which I love because you put a ...

24 Days of Togetherness (Days 20-24)

Image
I can’t believe this year’s 24 Days of Togetherness is over just like that. The holiday season seriously FLEW BY this year. I’m a little sad that it’s over, but we definitely had a blast and created some wonderful memories together as a family. And, of course, I love that I was able to document and share them here. Although, truth be told, we didn’t exactly stick with the plan this year as you’ll see in this little recap of our final days of 24 Days of Togetherness. Merry Christmas, everyone! Day 20: Drink hot chocolate.  Day 21: Have a holiday happy hour! Mal and I (obviously) went to Scarlet Oak to enjoy some drinks and apps. Day 22: Buy each other $5 gifts. We actually ended up using these as stocking stuffers for each other. Mal and I ended up getting each other new kitchen counters for Christmas, so we didn’t do traditional gifts this year. We’re planning to install a backsplash next week, so I’ll share photos of the final product then.  Related: If you’re local ...

Instant Pot Garlic and Ginger Short Ribs with Sweet Potatoes

Image
The combination of bone broth, coconut aminos, fish sauce and balsamic vinegar makes such an incredible braising sauce for meat, it’s easy to imagine using the sauce for more than just short ribs. Then again, these short ribs are so good and so easy to make, why bother changing up this recipe at all? An Instant Pot comes to the rescue again, making the meat fall-off-the-bone tender in 35 minutes flat. The braising sauce, plus garlic and ginger, impart rich umami flavor. Savory, sweet, salty and funky flavors are all there in perfect balance. These Instant Pot short ribs really are irresistible. Here, they’re served with baked Japanese sweet potatoes , which taste really good with the meaty, salty ribs (although any type of sweet potato or yam will do). Steamed broccoli or sautéed greens like spinach and bok choy will round out this meal perfectly. Servings: 4 to 6 Time in the Kitchen: 30 minutes hands-on, plus 1 hour for both ribs and sweet potatoes to cook Ingredients 2 Ja...
