Weird Baby Things You Keep

Hi, guys! Happy MONDAY! 🙂 Our morning started bright and EARLY. A couple of weeks ago, I started getting up around 4:30/5:00 AM on Mondays and Fridays (when Quinn doesn’t go to school) to get a jumpstart on my work. It’s worked out really well since the early morning hours are quiet, and I’m alone with my iced coffee, so I get a ton accomplished! 😉 But, this morning, Quinn woke up shortly after I did. I put him back to bed, but he only stayed in his room for about 20 minutes before he came into my office insisting that just wasn’t tired. Whomp whomp. On the plus side, however, Quinn was awake early enough to say goodbye to Dada before he left for school. There were lots of Monday morning “snugs” for all of us! 🙂 I had some leftover canned pumpkin, so I whipped up a delicious oatmeal mixture yesterday afternoon and stored it in the fridge overnight. In the morning, I reheated it in the microwave and added a scoop of Teddie Peanut Butter – and just like that breakfast was done!...

Fall arrived in Virginia this weekend! We went from 90 degrees to hurricane rains to crisp,  chilly air in one week. I’m hoping the heat stays away – I’m so over it! Everyone was running around here celebrating, and all my friends were posting photos of trips to farms, apple orchards, and all.the.fall. things. I wanted to stay close to home, so the best I could do was a Insta Story of some pumpkin spice whipped cream I bought at Whole Foods I’m writing this on Sunday, but as of today (Monday) I’m 39 weeks. (News will likely break on Instagram first, so check there!) I feel very much like a ticking time bomb at this point. I want to keep my schedule totally clear and don’t want to venture far from home. I’m “almost 3” cm dilated and 60% effaced, so my doctor told me do not wait to go to the hospital if contractions start up quickly. I know second babies can come fast, so I think that has influenced my home body feeling. I don’t want to schedule things for later this week, and I...

Hi, friends! I can’t believe we are already into the third week of October! Crazy, right? Time flies during this time of year, especially when we have so many fun activities on the calendar. Every weekend has been jam-packed with fall adventures – everything from  apple picking to  corn mazes . October is definitely one of my favorite months of the year. I also love, love, lovvvve the fall food scene! There are so many in-season items that I just can’t get enough of – as you’ll see throughout this blog post. Gym & Swim Days

Quinn and I have added a new activity to our Quinn and Mumma “ gym days “… swim lessons! 🙂 Quinn was basically a fish all  last summer and totally obsessed with being in the water, so it was definitely time to sign him up for lessons. Our most recent gym day (Friday) started later than usual. It was gray and raining, so Quinn slept until a little past 7:00 AM. After that, we “dillydallied” (Quinn’s words) around the house, which included watching TV, drinking iced coffee, eating breakfast, and getting ourselves ready for the day. My breakfast was quite delicious – I toasted up a couple of slices of bread and heated up a piece of 4-Ingredient Salsa Breakfast Bake to place inside for a quickie breakfast sandwich. It was awesome! I highly recommend it! 🙂 Once we got ourselves ready for the day, Quinn and I headed to CrossFit. (Quinn insisted on wearing his Crocs “for the pool.” Haha!) Clean Eating Vegetable Curry Recipe

This clean eating vegetable curry could totally be my new favorite dish. I’ve been plant based for about six months now. So far so good! But I do find that it’s much easier for me to fall into a rut. It’s been an interesting balance trying to find foods I can eat and that Mini Chef will actually eat. Add to that the fact that I’m also avoiding gluten at the moment and it makes dinner time a serious challenge. As I write this, Mini Chef is on a week-long school trip, leaving me at home to eat whatever the heck I want. While I miss him terribly (yes, I was ugly crying when he left), I am using this week to really dive into trying new things. Foods that I like and don’t have to share! This one turned out amazing! I’m pretty sure it will become a staple on the weekends when Mini Chef is with his dad. Yum!! RECIPE NOTES: When this is first finished cooking, the spice is over the top.
