Birch Had The Flu Hi friends!! It was a whirlwind of a weekend over here because Mr. Birch came down with the flu!! Poor buddy had a high fever and we took him to the doc and the quick swab came back positive for Influenza B. He’s much, much better today and so far he hasn’t passed it on to one of us. (Knocking on all the wood!) He basically drooled all over me all weekend – my clothes were covered. I think he sneezed into my mouth at one point. There was nothing I could do to protect myself except wash my hands and hope my flu shot did it’s thang. His case was mild So long as we didn’t get behind on Motrin or food, he was in a pretty good mood for someone with the flu. I think we can thank his flu shot for a more mild case than usual. He LOVES this Eric Carle book and knows all the animal sounds now! This one is a favorite too. Here’s what we’ve been eating! French toast, grapefruit, bacon Overnight oats with banana, blueberries and almond butter Muesli! Seven Sundays ...

Instant Pot Chicken Stew Recipe

Image
This Instant Pot chicken stew recipe is perfect for a chilly evening. It’s a one-pot dump meal, so meal prep is minimal. If you’re looking for an easy chicken recipe you can just dump in your Instant Pot and walk away for a while, this is it! Plus, it freezes really well for stocking your freezer, and in the right container, travels well for lunch or even a portable dinner. This is a great stew for meal prep! INSTANT POT STEW Few things are as delicious and tender as meat made in a pressure cooker. If it’s seasoned and cooked right, it’s the same delicious as that “fall off the bone” tender you get from a slow cooker or from slow roasting. It’s delicious and so, so easy! INSTANT POT CHICKEN STEW FOR THE FREEZER This Instant Pot chicken stew freezes really well for up to 6 months. It’s a great stew to use for meal prep or an easy meal to make for several people for dinner. Cioppino

Image
A substantial, acidic, briny, bright one-pot meal with a heady dry white wine broth, cioppino originated in San Francisco from fishermen’s daily catch and the Italian-American influences around the wharf and surrounding areas. The warm, comforting, aromatic stew chases away any chill from the thick fog that can blanket the area. This seafood stew can work with a variety of seafood and fish. We like shrimp, scallops and clams because they’re widely available and cook quickly. Steaming the clams in the sauce gives the sauce great flavor. Halibut is a wonderful fish choice, but can be substituted for other firm, white-fleshed fish. If you notice the stew is becoming too dry, you can add additional wine or broth until it reaches the consistency of your liking. Cioppino Ingredients 1 cup chopped onions 8 Campari tomatoes, halved 3 Tbsp. olive oil 6 cloves garlic, whole with skin on 1 tsp. dried basil 1 tsp. dried oregano 1/4 tsp. ground fennel 1/4 tsp. black pepper 1/4 tsp. s...
