Pineapple Upside-Down Baked Oatmeal

Give basic baked oatmeal a tropical twist with pineapple rings, juicy cherries, and a sprinkle of brown sugar to caramelize on top. This Pineapple Upside-Down Baked Oatmeal is ready in just 30 minutes. This recipe is ideal to make ahead and reheat on weekdays or serve fresh out of the oven for brunch. My New Favorite Baked Oatmeal You guys, I think this is my favorite baked oatmeal recipe yet! I know warm fruit can be polarizing, but am totally Team Warm Fruit. There is nothing like warm roasted pineapple. The brown sugar sprinkle on top gives it a bit of caramelization on top – it is divine! These bacon stuffed chicken thighs are what you want to make when you need everyone to love dinner. Everyone loves bacon, and while I no longer eat pork bacon, I did find a clean bacon by Applegate, and life has been good ever since. This one was actually Mini Chef’s creation. I was at a loss for what to make for dinner so I told him to invent something, and the rest is fabulous, delicious history that has been made several times since that night. FAST CHICKEN DINNERS: We all need that quick and easy chicken dinner. And while some may be quicker than this one, I promise it won’t be by much. You actually don’t have to do anything with the chicken except lay it flat on the baking sheet. The only prep required is chopping the onions and mushrooms, and sautéing them while you bake the bacon in the oven. So you’ll have a couple things going on at once, but it’s basic and easy to do. Biscotti (Italian for “twice baked”) served alongside a caffeinated frothed milk beverage is a pairing meant to be savored. Envision a sun-dappled restaurant patio that overlooks the cerulean Mediterranean. After a leisurely lunch of grilled whole fish and vegetables, you’re served a block of biscotti to dip into a creamy-capped cappuccino. The best food can transport us, even in the barren frost of winter, to a sunnier place. While typically not a Primal or keto choice, biscotti is a twice-baked cookie that can be easily revamped to be lower carb. Make the plain almond-rich keto biscotti with your sweetener of choice, or accessorize it with freeze-dried raspberries and a drizzle of melted dark chocolate. This tropical bean salad will bring a little sunshine to your day. With kiwi and pineapple for a burst of flavor, broccoli slaw and black beans are the base of a healthy lunch or side dish. I was brainstorming some prep-day salads to make for our family this month and this salad came to mind. It’s funny I can barely remember what I did last month, but I have so many good food memories!
