Homemade Spaghetti Sauce Recipe

Image
This homemade spaghetti sauce recipe is a great sauce to make if you run out of the jarred spaghetti sauce you usually use. This sauce uses ingredients that are all from your pantry (except the meat, of course) and can easily be made vegetarian/vegan. It’s tasty and perfect for whipping up last minute or in a pinch. We are just now starting our shelter in place orders here in North Carolina. I did a big shopping trip last week, so I’m trying really hard to avoid the stores. But inevitably, there will be that one thing you forgot to buy at the store. For me, that was spaghetti sauce. I thought we had more than we needed. I was wrong! So instead of skipping spaghetti night, I improvised and came up with this recipe. It’s delicious! Honestly one of the best spaghetti sauces I’ve ever made! HOW TO MAKE HOMEMADE SPAGHETTI SAUCE While every person who makes spaghetti sauce will give you different rules and ingredients for what they consider to be the BEST sauce, most agree on a cou...

Dairy-free Dalgona Whipped Coffee: the Viral TikTok Drink Recipe Made Primal

Image
Dalgona coffee, or whipped coffee, is the viral TikTok drink that’s suddenly plastered all over your feeds. To be perfectly honest, it couldn’t have hit the waves at a better time. Staying at home means you are your own barista, and your kitchen becomes your new favorite coffee shop. And the new shelter-in-place lifestyle leaves us with a few extra minutes in the morning to make a fancy coffee drink every now and again. What is Whipped Coffee, aka Dalgona Coffee? Dalgona coffee is basically an upside-down iced latte. Instead of coffee on the bottom and frothy milk on top, you have milk on the bottom and fluffy a fluffy coffee whip on top. The contrast looks incredible in a glass, and according to the Internet, it tastes amazing. The problem with most whipped coffee recipes is that sugar and milk are the star ingredients. For most of us, drinking that much sugar and dairy first thing in the morning would knock us down when we’re trying to wake up. The solution? Make it Primal. Swa...

How to make “Rice Krispies Treats” without controversial ingredients like BHT and corn syrup

Image
DISCLAIMER: I can polish off a half of a pan of these Rice Krispie Treats in one sitting, so before you start reading, don’t get mad at me – you’ve been warned.  Seriously, though it makes me incredibly sad that so many children are eating “treats” full of corn syrup, artificial flavors, BHT, TBHQ, DATEM, and all kinds of additives that are linked to health issues. ( 1 ) I grew up with homemade Rice Krispie Treats – they were a staple in my mother’s kitchen. Since then, Kellogg’s came up with this processed crap that makes its way into kid’s lunches everywhere.  This ingredient list is CRAZY to me, especially since you can make similar treats at home without all that nonsense. Here’s how I make mine, but first let’s talk about the ingredients.  There are 3 basic ingredients you need to make Rice Krispies Treats: (1) butter, (2) crispy rice cereal, and (3) marshmallows. But you need to be extra careful on how you choose these ingredients… 1. Butter : Look for a p...

Air Fryer Avocado Fries

Image
Crispy on the outside with ripe avocado on the inside, these air fryer avocado fries are great as an appetizer, side dish, or snack!  You probably didn’t know that in early 2018 I was hired to develop some recipes for an air fryer company to use in the instruction manual that came with their appliance. While I completed my assignment (five different recipes with photography and a nutrition forward), the air fryer they were developing never made it to market. I’ve been sitting on these recipes for a while and have made them a few times without ever mentioning my air fryer. (I also have a kale chips recipe – hence the kale below!) Soooo….what IS an air fryer? An air fryer is a kitchen appliance that uses convection to circulate hot air around food. Instead of just using heat, the combination of heat + air cooks food faster and with a bit more crisp. While I am not a die-hard deep fry food gal, there are things (like sweet potato fries! Or panko-crusted anything!) that the air f...

I’ve been sharing a lot of workouts and motivation! P.S. Check out this podcast episode I recently recorded for the ABCs of Matrescence. We chat about motherhood, entrepreneurship, and life with ulcerative colitis. 1. AllBirds Tree Runners I recently earned a pair of these shoes as an inventive gift from Beautycounter, and I am in love. In. Love. I can’t believe I’d waited so long to try AllBirds. I mean, I bought a pair for Mal a couple of years ago after hearing how comfy they are, but never thought to buy myself a pair… and Mal raves about his and wears them ALL the time! And, of course, I plan to wear my Tree Runners all Spring. Bonus: the...
