How to Make Pemmican

Image
If you’ve ever had a meat or jerky bar made of finely chopped dried meat and perhaps berries, you may be familiar with pemmican. Pemmican consists of lean, dried meat – usually beef nowadays, but bison, deer, and elk were common back in the day) which is crushed to a powder and mixed with an equal amount of hot, rendered fat, usually beef tallow. Sometimes crushed, dried berries are added as well. For long periods of time, people can subsist entirely on pemmican, drawing on the fat for energy and the protein for strength, and glucose, when needed. Vihljamur Stefansson, eminent anthropologist and arctic explorer, went on three expeditions into the Alaskan tundra during the first quarter of the 20th century. His discoveries – including the “blond” Inuit and previously uncharted Arctic lands – brought him renown on the world stage. People were fascinated by his approach to travel and exploration, the way he thrust himself fully into the native Inuit cultures he encountered. Stefansson s...

Learning to Love Liver (with Middle Eastern Lamb Liver and Liver Paté Recipe)

Image
Today’s guest post is written by Dr. Terry Wahls, Institute for Functional Medicine Certified Practitioner, clinical professor of medicine at the University of Iowa and author of The Wahls Protocol: How I Beat Progressive MS Using Paleo Principles and Functional Medicine (paperback). You may be familiar with her recovery story, featured here .    I heard a lot of you want to know more about liver! I’m glad you are curious. Liver is great for you, and you need only eat 6 to 8 ounces per week to gain its benefits. I limit liver because it is quite high in retinol, which is the active form of vitamin A. Retinol is involved in the management of cell differentiation and immune function. Carotenoids in colorful fruits and vegetables can be converted to retinol; however, the efficiency of these enzymes depends on the efficiency of Beta-carotene 15’-15’ oxygenase, which varies based on one’s underlying genetics. Some single nucleotide polymorphisms have a 70% reduction in the eff...

The Importance Of Good Nutrition

This post is a long-time coming! Since before I became a Registered Dietitian, I have always been most curious about the psychology of eating and what drives us to reach for the food and snacks that we do. How do those choices affect our health and our happiness? I often say that I went to... Supplements that Support Recovery from Overtraining Syndrome

Image
Today, we’re going to chat about some supplements that support recovery from overtraining syndrome.  I told you all about how I fell into the overtraining rabbit hole when I was balancing writing a new book, managing a full client load, and working out at Orangetheory 4-5 times a week. We’re just about 3 months out from that, and I’m feeling so much better. I’ve lost some of the weight I gained, my skin cleared up, and I’m sleeping like a baby (thank GOD).  I attribute that in part to stepping back and reevaluating my priorities, but also to being intentional about recovery. It wasn’t just doing fewer workouts at a lesser intensity; it was intentional recovery and replenishment that has helped me start feeling ‘normal’ again. Supplements that help recovery One major component I incorporated into my routine was adding in supplements that specifically work to support my hormonal health and help reverse the effects of overtraining and HPA-Axis dysfunction, specifically rel...

Artichoke Chicken Pasta Recipe

Image
This artichoke chicken pasta is a deliciously different option for dinner tonight! Artichoke hearts are something I personally love. Mini Chef doesn’t care for them, but for me, they are a delicious treat from time to time. This delicious dish has a very mild, lemony tang to it which is nicely balanced by the sautéed onions and garlic. It’s a gentle balance of tang and savory flavors that pairs well with the pasta. I didn’t serve this with cheese, but some parmesan would go really well with this. HOW TO MAKE ARTICHOKE CHICKEN PASTA This is a two-pot recipe. Or technically, a pot and a pan. I prefer a cast iron skillet, but use what you have. The main thing is to get your pasta cooked separately. The shape of the pasta can be whatever you like best. I love shells in a dish like this, but use whatever you like best. Once the pasta is cooked, you’ll rinse it to cool it down and transfer it to a mixing bowl, then add the chopped artichoke hearts to that bowl. Everything else happe...

Keto Angel Food Cake

Image
For whatever reason, angel food cake seems to make its yearly debut during that time when warmer weather breaks. Is it the toppings – fresh berries, or a perfectly ripe peach? Is it those first rays of sunshine after a cold winter that make you want something pillowy soft and sweet? There could be a hundred reasons why angel food cake is a slice of spring on a plate. Angel food cake may be something you considered a cheat, until now. Traditional angel food cake recipes call for a lot of sugar – since there’s no frosting, the cake has to be sweet on its own. This keto angel food cake recipe gives you all of the light, airy sweetness without the aftermath that comes with a sugary dessert. And, it’s surprisingly easy to make. Proper whisking of the egg whites can be intimidating, but you won’t mess it up. The key is to stop whisking when you get “soft peaks.” You’ll know you’re there when you can make small rolling hills in your egg white mixture by slowly lifting your whisk out of the...
