Most of us have been sheltering-in-place for a few months now, and we have evolved into an unprecedented state of fear and hyper-vigilance in this pandemic. After a long period of incarceration, we are now gradually released into the wild, which introduces us to a whole new level of anxiety. Public health recommendations appear to be flip-flopping regularly, and we are learning on the fly as the situation evolves. In today’s post, I’d like to share some thoughts on how we can regain some control of our lives. Rather than duck and cover for several more months, we can face this beast head-on. I don’t mean being careless and reckless and not following s...

Dippin Dots Ice Cream Recipe

Image
This Dippin Dots Ice Cream recipe is a healthy and wonderful treat on a hot summer day. And you don’t have to go to the mall to get some! Okay, I admit it. I’ve had this popular ice cream once in my life, and I absolutely hated them. I just cannot understand the fascination with this type of ice cream. But that said, I know a lot of folks out there LOVE the stuff. You see a lot of kiosks in local malls and around town in these parts. I was on Pinterest the other night (~gasp!~) and I ran across a pin for a yogurt recipe that reminded me of Dippin Dots. Only they used regular, flavored, sugar-filled yogurt to make them. So I thought, why not give this a whirl with some Greek yogurt and natural sweetener? Well I can tell you that both Mini Chef and I are now HUGE Dippin Dots fans….. of the healthy, homemade variety. It’s a wonderfully healthy treat for kids and adults alike and makes for a really fun snack. It may not have the coloring of the traditional version, but you can’t ...

Planting Seeds

Image
June 5, 2020 Planting Seeds Hi friends! We’ve been offline planting seeds. Seeds of growth. Seeds of conversation. Seeds of books/podcasts/articles. While the air we’re breathing is feeling different by the day, the changes that need to happen in our society are going to take time. Unlearning a bias doesn’t happen overnight. There isn’t a handbook or course you can take to check off the box. There isn’t one big thing we do and we’re done. Change happens inch by inch, day by day, like watching a plant sprout from the ground. It starts at home; it grows and spreads through communities; and it continues with the next generation. Some sprouts grow faster than others, but only when they have plenty of sunshine. Be the sunshine. Keep planting the seeds and one day we will have a beautiful garden.
