Cucumber Sandwich: 1. Cut cucumber lengthwise and horizontally. You now have 4 long "boats". 2. With a spoon, scoop out the inner (soft) part of the cucumber. 3. In a bowl, mix gently: 1 avocado, cubed + 1 tomato (cubed), lime juice, cilantro, salt + cayenne pepper 4.
