It’s been a while since I made granola from scratch, and I have no idea why. It’s so simple to make, and best of all, it makes the house smell amazing!

They are made of 18/8 stainless steel, have flat bottoms so they won’t tip, are dishwasher safe (a must!) and stack together perfectly in a drawer. I think the best feature is that they are etched on the inside so that you can see the 1/3, 1/2 or 3/4 volume mark on the inside of the larger cups, so you can measure more with only one cup out.

So, let’s do a little measuring, shall we?

This recipe uses red quinoa for extra protein, color and crunch! Buttery walnuts and rolled oats make up the bulk of the bite, and oat flour helps to clump it together a bit.

Butter, honey, vanilla, and cinnamon bring it all together.

Start by mixing all the ingredients into a large bowl.

Mix the butter throughout to ensure everything is evenly coated. Clean hands work well for this!

Once everything is moist and clumpy (lovely description, huh?!), pour onto a half-sheet pan covered in parchment and bake at 325 degrees for about 25 minutes, stirring once in the middle to ensure even cooking.

Quinoa and Walnut Granola

Ingredients

  • 2 cups rolled oats
  • 2/3 cup chopped walnuts
  • 1/3 cup quinoa
  • 1/4 cup oat flour (made by putting oats in a food processor – or substitute with whole wheat flour)
  • 3 tbsp butter
  • 3 tsp honey
  • 1/2 tsp vanilla
  • 1/4 tsp cinnamon
  • 1/8 tsp kosher salt

Instructions

Start by mixing all ingredients into a large bowl.

Mix the butter throughout to ensure everything is evenly coated. Clean hands work well for this!
