Monday In Meals + I Had Food Poisoning

Hi, guys!

I feel like we haven’t talked in forever. Well, ok, not since Friday, but it felt strange not sharing a weekend recap with you. I apologize. We’re jamming over here in Designed to Fit land, so I was busy with that and then I got sick, like food poisoning sick. Ugh, it was awful. I’ve actually never had food poisoning, but I guess there’s a first for everything, right?

The only “weird” thing I ate– that maybe could have made me sick– was bagged baby spinach. Nothing else was suspect and, thankfully, I’m the only one who ate it. Mal was out-to-dinner with friends, and Qman ate pizza, so it was just me… rolling around in bed, trying not to die, and then, a couple of hours later, swiftly walking to the bathroom to vomit. UGH, not fun. I hate throwing up so much. But, hey, once the evil was out, I was totally fine. I fell right to sleep and woke up the next morning feeling like a million bucks. So, there ya go: My first experience with food poisoning. Good times. Anyway, I felt completely fine yesterday and ate normally, so I wanted to share my Monday in Meals!

5:19 AM: I pour myself a glass of iced coffee with collagen and coconut creamer and then get to work.

6:45 AM: My stomach starts to grumble. Time for breakfast! I eat two pieces of Butternut Squash Breakfast Casserole (I left out the sage because Mal isn’t a fan) and pour myself iced coffee #2.

7:40 AM: Qman wakes up. Holy cow. I don’t think he’s ever slept so late in his entire life.

We spend the morning playing before his weekly Early Intervention appointment.

Qman is killing it with words lately. He also busted out “bagel” for the first time yesterday morning. 🙂

11:05 AM: Snack time: I have Muuna peach cottage cheese with Cheerios.

After snack time, Qman and I head to Jo-Ann Fabric to get his Halloween costume. He wants to be a ghost, so I buy two yards of white fabric. I just need to cut out a couple of holes for eyes, and his Halloween costume will be complete!

12:30 PM: Lunchtime! Lunch was steamed broccoli and peas with baked chicken breast, Caesar vinaigrette, and shredded Swiss cheese. It was a little random, but I ended up throwing out the spaghetti squash lasagna that I made for dinner the previous night (because food poisoning), so I just winged it for lunch.

1:00 PM: I finish off Qman’s apple slices from his lunch.

2:47 PM: Cranberry-Cacao Nib Protein Muffin (recipe coming to CNC soon) and Dandy Blend mixed with collagen and banana milk. Yes, banana milk. It’s actually quite tasty and nutritious. The brand sent me a carton to sample (I was seriously so curious), and now I’m hooked. I really love bananas, so I’m using it in my iced coffee, smoothies, cereal… everything lately!

About an hour later, Qman wakes up from his nap. When we go downstairs, he sees that Murphy is sleeping, so he covers him with “Geet,” his blanket. Aww, so sweet.


Shortly after that, I drive to CrossFit. I finish the WOD in 9:13 Rx, which included 14-pound wallballs to a 10-foot target and totally kicked my butt. That extra foot is no joke, especially after a 60-calorie row! Oy.


5:40 PM: A mini protein shake made with SFH vanilla Recovery and orange juice. I knew I was going home to eat dinner, so I only used a 1/2 scoop (maybe less?) of protein powder.


5:55 PM: A chicken nugget. When I walked in the door after CrossFit, Mal was making Quinn’s dinner, so I snagged one. I was hungry, and they just smelled so good!


I throw together dinner for Mal and me and then head upstairs to shower. Quick shout-out to the rice bowls from O Organics. They’re awesome!


6:38 PM: I eat chicken stir fry with rice for dinner. I’m so hungry that I forget to snap a photo before I dig in, so, FYI, there was a much bigger portion before I started. #feedme


7:11 PM: I eat about 500 Justin’s Mini Dark Chocolate Peanut Butter Cups. My gosh, they are addictive!!!! The peanut butter inside is ridiculous… thick, soft, and creamy. I probably shouldn’t keep these things in the house anymore. I have zero willpower around them!!

Crock-Pot Black & White Pumpkin Chili

Guys, I’m so glad that fall is in full swing. I love everything about the season, especially the cool, crisp weather and beautiful foliage. And, of course, I love all of the comfort food and deliciousness that goes along with it.

Now that we’re nearing the colder months of the year, it’s truly the perfect time to break out the crock-pot and make a big ol’ batch of chili. Am I right? And even better than traditional chili? Pumpkin chili. Ooooh, yes. You know how I love all things pumpkin! 🙂 And this recipe couldn’t be easier: Just set it and forget it!

This Crock-Pot Black & White Pumpkin Chili combines the best of both worlds: Savory chili flavors with pumpkin, spice, and everything nice. Neither the chili or pumpkin is especially overpowering, but, instead, the two form a well-balanced, blended flavor. It’s definitely a fall-inspired meal that will fill you up and leave a smile on your face. I hope you love it as much as I do! 🙂



  • 1.5 cups canned pumpkin
  • 1 can (15.5 oz) black beans
  • 1 can (15.5 oz) white beans
  • 1 can (14.z oz) diced tomatoes with roasted garlic & onions
  • 1 cup water
  • 1/2 cup marinara sauce
  • 1 tbsp extra-virgin olive oil
  • 2 tbsp chili powder
  • 1 tbsp garlic powder
  • 2 tsp pumpkin pie spice
  • 1 tsp salt

Directions: Combine ingredients in crock-pot. Cook on high for 4 hours. Serve immediately or freeze for future use. <— Makes an excellent quickie freezer meal!

Makes approximately 5 cups

Hi friends!! Hope you had a wonderful weekend. Mine was filled with lots of sunshine, soccer, and chili!! ‘Tis the season!

On Friday night I went to my friends’ house for a gathering, and I had this great vegan sweet potato chili. Plus cheese plate deliciousness and a few glasses of vino.


Saturday morning after breakfast I took Mazen to soccer practice. But first: toast, banana, PB, coffee.


This was the first practice I had the chance to go to (Matt, rain, rain, travel covered the first month) and I was SO EXCITED to see how it went!


Coach B had a whistle and the kids did really cute little drills. Mazen did great and followed directions! I was so tempted to step in and practice a little myself. Lord knows I need some help with my touches and dribbling 😉


The kiddos scrimmaged with another team at the end of practice, and Mazen was not into that at all. He doesn’t really understand the concept of opponents yet and why the other kids don’t share the ball. It’s quite cute.

Soccer moms represent!! I also met two blog readers whose kids are on Mazen’s team – hi friends!


After practice we went home to rest for a bit and then out to lunch at Whole Foods to pick pumpkins! I had hoped to take M to a real pumpkin patch, but for various reasons, this was our best option. He didn’t seem to mind, as we had fun strolling the rows and picking two out. He made ghost noises the whole time!


Although don’t you find this sign a bit confusing?! Lol! Guess they are the same shape : )


I got lunch at the hot bar – pecan catfish, green beans, okra, and the best sweet potato casserole.


Saturday afternoon we played construction worker and M built this big pillow house in his bedroom.


I dropped M off with Matt while I went to a make-up soccer game at 4:30 at the same field where I had gone for Mazen’s practice that morning. It was blustery and chilly, and really hard to tell the difference between the red team and the orange team with the setting sun in our eyes! No subs = 90 minutes of game time.


Saturday evening after Mazey was asleep I made panko cod, roasted broccoli and rosemary red potatoes for dinner.


Sunday morning I was up for more soccer. French toast, toddler style! I know it’s not the most polite, but it sure is easier to eat if you cut it all up at once first 😉


I had back-to-back games, although I only played the second half of the first one so I didn’t have to rush out the door.  It was a gorgeous day for soccer!! My team pulled off an epic win, and we think we have moved to the #1 spot in our division. A big deal since we hovered at the bottom for the longest time!



I spent the rest of my Sunday on the couch with aching legs and stiff joints. Rest day today for sure!
