This latest Blue Apron dish – Spiced Cauliflower & Jasmine Rice with Poblano Pepper & Cilantro-Yogurt Sauce – was one of my all-time favorites! And as a vegetarian dish, I thought it would make an excellent addition to any holiday table.
The ingredients were all so GREEN! (So fresh and so green, yo.)
Check out this beauty of a cauliflower.
This recipe was simple to make, yet full of flavor. The cauliflower was cooked once in a skillet, then tossed in rice flour and a spice blend, and returned to the skillet for a second session to crisp it up.
Boy, did that sweet chili sauce make the recipe! That’s an ingredient I would not otherwise have had on hand, and I want to hunt some more down!
The spiced vegetables were served with crunchy roasted cashews, nutty jasmine rice, and a cool cilantro-yogurt sauce that I could not get enough of.
This dish was great as a light dinner (and even better for lunch the next day!), but as a side dish at this year’s Friendsgiving I know it will be a hit as well.
