Sweet Potato, Spinach & Feta Egg Bake Recipe

Good morning! We love a good egg bake in our house. Make-ahead egg bake recipes make breakfast quick and easy (just nuke in the microwave), and they also start our day off on the right foot with a healthy and satisfying meal. This  Sweet Potato, Spinach & Feta Egg Bake recipe   hits the   mark as it’s tasty, filling, and nutritious, with a mix of flavors and ingredients. This recipe actually came about because of our little spiralizer lover. We had so many veggie noodles in our refrigerator, and we needed to use them up quickly! This egg bake recipe was the perfect way to use them up and try something new. I hope you enjoy it as much as we do! Ingredients : 1 medium/large sweet potato (~5 ounces), peeled or unpeeled 3/4 cup chopped spinach (I used frozen) 1/2 cup crumbled feta 4 eggs 1 cup liquid egg whites (or ~8 egg whites) 1-2 tsp onion (or garlic) powder salt + pepper to taste Directions : Preheat oven to 400 degrees F. Love a fizzy beverage but know better than to reach for the usual can of high-sugar soda? If you’re mindful about nutrition but enjoy something sweet and bubbly, these four better-for-you choices might be for you.   Soda Specifics A can of a traditional soda contains carbonated water spiked with high fructose corn syrup, artificial colors, flavorings and possibly caffeine. Many also include phosphoric acid. You don’t need to be a nutrition expert to know that soda can be bad for you. Aside from all the empty calories, all those processed ingredients can have a negative impact on digestion and bone health. Breakfast Banana Hot Dog

Waaaaayyyy back in April of 2008 I created one of my most linked posts of all time. Back when “going viral” had nothing to do with social media. Behold, the vintage breakfast banana  Hot Dog and Fries! Admittedly, I don’t know if I have made this since! I don’t have hot dog buns in my house all that much, especially during the Great Harvest years. But recently I had some leftover from a cookout, so I decided to make a 2016 version for Mazen, who got a kick out of his breakfast hot dog! Just like the original, the “ketchup” and “mustard” in the breakfast banana hot dog are peanut butter and raspberry jam. (Although I might add that Mazen was actually disappointed he didn’t get to put real ketchup on this. I was surprised he didn’t insist on adding some!) No need to be four years old to enjoy this one – I ate every last crumb of my breakfast banana hot dog! This hot dog thinks he is a lap dog!!
