Monday In Meals with Mal

Hi, guys! I have a special edition of Monday In Meals for you. Mal is home for April vacation, so we had the opportunity to spend the day together. That said, here’s a recap of my eats with some adventures thrown into the mix! Breakfast : Scrambled eggs with kale and maple chicken sausage + iced coffee mixed with Dandy Blend , collagen , and coconut creamer. Workout : Orangetheory  <— so fun!! Post-workout : Smoothies from Green Light.  We both ordered the #2 (banana, cashews, coconut oil, vanilla, coconut milk) with protein powder + greens. We also got to try some REALLY fresh ginger shots. Boy, did they have a kick!! Lunch : Ham and cheese sandwich (bread is from Trader Joe’s) + side salad with balsamic vinaigrette. Snack : Veggies + hummus. Dinner : A big salad with chicken breast and Caesar dressing. And a glass of wine . And a mini bunny cake from Easter. The end. Question of the Day How was your Monday? A+ Easter Weekend

Good morning and a very HAPPY Monday to you! How was your Easter weekend? Ours was AWESOME. Seriously, it was one of the best weekends we’ve had in awhile. We spent time with family and friends and got lots of sleep. My Grammie told me just yesterday: “You people do too much,” so I was glad that we were able to get some much-needed rest. With that, here’s a recap of our A+ weekend! Qman actually slept past 7:00 AM this morning too! Holy cow. He usually wakes up between 5:30 – 6:30 AM, so sleeping past 7:00 was quite a treat! Once we were awake, it was time for PANCAKES! But not any old pancakes: DINOSAUR PANCAKES !! I love pancakes, but, man, they do not keep me full, so like an hour later, I made myself a “magical” green smoothie. My gosh, it was delicious! After that, we ran some errands and then met BOTH sets of grandparents for lunch! That night, Monica and Chandra came over for some happy hour action. Happy Sunny Easter Sunday!

We had a great little Easter full of warm weather sunshine. Just like the Easter bunny used to do when I was little, he or she hid Mazen’s basket in the house so he had to hunt for it. It only took him about 15 minutes to find it, but he sure was excited! (It was in my master bath tub!) His basket had waaaaay too much chocolate and sugar (oops!) but he loved every inch of it. (Great Harvest Pecan Swirl for early breakfast!) We got dressed up and headed to Thomas’s parents’ house for brunch and an egg hunt with Thomas’s nephew! They boys had a great time hunting for eggs. I think we hid about 50 eggs, so between the two of them they kept going and going and going like little energizer bunnies! After the hunt, we had a great brunch of waffles with fruit and bacon. Delicious!! Back at home we changed out of our Sunday best and finished planting everything we bought in my Saturday snapshots post ! We tackled the whole front yard on Saturday and the back yard today, including t
