Dairy Free Carrot Cake Smoothie + What I Ate in a Day

Now that Mal is back to school, Quinn and I are starting to get into a routine with our “gym days” once again. Starting our day with an hour-long CrossFit workout for me and playtime for him in the kids’ room always starts our day off on the right foot. I swear, both of us have a better day if it starts with the gym! 🙂

Since class doesn’t start until 9:00 AM, Quinn and I always make sure to have breakfast together before we leave the house. This morning, it’s overnight oats and iced coffee for me. My overnight oats are made with So Delicious dairy free coconutmilk vanilla yogurt, chia seeds, collagen, and fresh strawberries on top. Qman also eats some So Delicious yogurt (“like Mumma”), but he opts for the strawberry banana flavor instead. I also serve him apple slices and a glass of milk.

In addition to their yogurt alternatives, we love a variety of So Delicious products and often purchase them as part of our family’s goal to eat more plant-based foods. We have no plans to give up animal products all together, but we definitely think eating more plant-based is important for our health, environment, and wallets.

After breakfast, we head to the gym. Quinn plays with his friends while I get my exercise on. The WOD is called “Jack,” and it’s a longer one at 20 minutes. I don’t count my exact number of rounds, but I swear I did more than 10!

After CrossFit, we say goodbye to our friends and then head to the library to return some books and pick out new ones. This week’s haul includes books about lizards, home robots, otters, My Little Pony, and Ninja Turtles, which Quinn is most excited about!

After the library, we swing by Target for a few things, including another iced coffee from Starbucks for me! 🙂

Back at home, it just about time for lunch, so I put together lunch for the two of us. On the menu for me: Salmon salad mixed with broccoli slaw, relish, and Dijon mustard with rice crackers and raw veggies on the side.

After lunch, Quinn goes down for his nap while I (finally) shower and clean up the house. His nap doesn’t last all that long, so he has “quiet time” and playing with his Magna-Tiles while I catch up with some emails. Quiet time lasts maybe 15 minutes before I’m playing with Magna-Tiles too!

We play for awhile more and then I get a craving for a smoothie. Quinn is always down for a smoothie, so I whip up a carrot cake-inspired one for us.

Carrots Cake Smoothie

Ingredients:

Directions: Combine ingredients in a blender until smooth. Divide between two glasses and enjoy! Makes 2 smoothies.

Once we drink our smoothies, we take Murphy for a walk around the neighborhood. It’s quite warm outside, so we ended up cutting our walk a little bit short so Murphy can cool off.

Shortly after that, Mal comes home from school. We catch up on our days and then he suggests a game of baseball in the backyard.

Quinn is loving baseball lately (and he’s actually pretty good!), so he’s more than ready to play!

We spend quite awhile outside before heading inside to get cleaned up and start on dinner. Dinner is one of our favorites because it’s quick, easy, and delicious: Cowboy Caviar Cauliflower Rice Bowl!

After dinner, we all get in our pajamas, watch some TV, and head to bed early. We’re slowly but surely getting back into the swing of things, but bedtime is still kind of an issue since we’re all used to staying up much later. We’ve started to prioritize it in the past week or so, and it’s getting easier and easier. I’m sure if we give it a little time, we’ll be back to our normal school routine soon enough!
