High-Protein Vegetarian Breakfasts (That Aren’t Eggs)

Hi, friends!

With the new year officially here, I wanted to share some of the macro-friendly vegetarian recipes that I plan to add back into my weekly rotation. After FULLY enjoying the holiday season, my body is craving much more nutritious meals. Anyone else? Of course, the fun part about taking a break from macro-counting and meal prep is that I always feel excited to jump back into a routine with more intentional eating habits (aka fewer cookies and more veggies)! 🙂

Now that we’re back to our usual morning routine, planning ahead is a must for me. On the top of my list is starting my day with a breakfast that keeps me satisfied all morning long. I find that if I focus on including protein, it prevents me from digging through the kitchen cabinets at 10:00 AM.

This recipe round-up includes some of my favorite high-protein, vegetarian, and egg-free breakfasts that I rely on again and again. If you’re vegetarian (or vegan), it’s not always easy to find a high-protein, egg-free breakfasts, so I hope these recipes give you some ideas and a little inspiration to get back on track in 2019!

Strawberry Cheesecake Overnight Oats

This recipe for Strawberry Cheesecake Overnight Oats is like having (cheese) CAKE for breakfast! You’ll love the texture of oats combined with fresh strawberries and crushed graham crackers. Simply prep a batch of these at night and you’ll have breakfast for a few days all ready to go. Just grab a spoon and dive in! This recipe also works well with plain or strawberry-flavored Greek yogurt!

2-Minute Breakfast Tortilla 

Breakfast doesn’t get easier than this, which means this is one of my go-to meals when I’m running out the door, especially before a workout, because I can throw it together in just a couple of minutes, and I know it will keep me satisfied.

I recently partnered with Maria and Ricardo’s, who makes authentic, wholesome, and seriously delicious (non-GMO) tortillas. I’ve used their tortillas for many years now, and I love how easy they make breakfast come together.

For this quickie breakfast (or snack), I first mix a couple of tablespoons of nut butter with a little protein powder (or collagen) and cinnamon. Then, I’ll grab an Original White Flour Tortilla and spread the nut butter on half. I’ll top it with banana slices, a bit more cinnamon, fold the tortilla in half, and then cut it into pieces. Easy as that!

The Best Peanut Butter and Banana Smoothie

Just about everyone has a favorite peanut butter and banana smoothie, but this one is truly the best. It’s loaded with two heaping tablespoons of peanut butter and a scoop of protein powder to keep you satisfied all morning long!

Banana Flax Protein Breakfast Cookie

This make-ahead breakfast is basically protein oatmeal (with ground flax and chia seeds) in cookie form. If you thought oatmeal for breakfast couldn’t get easier, it just did! And there’s 12 grams of protein in each cookie! Grab and go, baby!

Overnight Carrot Cake Protein Oatmeal

This recipe for a recipe for Overnight Carrot Cake Protein Oatmeal is quite delicious and super satisfying with a healthy (and balanced) dose of protein, carbs, and fat. You can also make this recipe dairy-free by using your favorite (non-dairy) protein powder or collagen. I also love this recipe for Overnight Peanut Butter Protein Oats.

Bye bye tree!! Thomas and I took the Christmas decor down this weekend. I am loving how open the room is again, obviously. She was a good tree, but 3 weeks is plenty of bonding time with her 😉

We’ve been doing lots of indoor crafts this week – Play Doh drive-thru, slime making, drawings.

We had visits from Uncle John and Uncle Dave! (Thomas’s friends)

The above was this weekend at Kardinal Hall where we went to meet up with friends. B took a pumped bottle and slept in the Solly for a good part of the time. Mazen and I played Uno! (Hairstyle by Matt…!) M also played well with the other kiddos in our group outside. (This card holder is a must for kids!)

I had a salad with a sausage on top for an early dinner. Sausage isn’t a very pretty salad topper – lol!

Typical breakfast display. Daily Harvest smoothie, coffee, pump, computer.

Typical lunch display: ROOTS!!! I gotta have a bowl at least once a week since discovering the satellite pick-up spot. A bowl is $10 and lasts me through two days of lunches, so I’m calling that a good deal for how much delicious food they pack in! On top is BBQ tofu and sweet potatoes – so good!!

I went on an outdoor run with an Aaptiv workout and did interval sprints. I pretty much feel like my old self working out again. Also I’ve been borrowing Thomas’s AirPods and am totally sold on them now. More on that soon!

Lunch buffet: leftover smoothie, pita chips, yellow peppers, PB&J toast. I forgot to read all of my magazines during the holiday season and now I am skimming them because I do not care about trees or gift guides – d’oh!

On Sunday Thomas made our favorite baked eggs dish with muffin, pear, and grapefruit on the side.

For Sunday night dinner we grilled steaks from Butcher Box and had baked potatoes and beans on the side. I tried the potatoes in the Instant Pot and had to do two cycles to get them cooked through. Still figuring out the optimal timing for them. I have sweet potatoes to try next! (This just in: Butcher Box is now going to be including wild salmon in its offerings!!)

Thomas made a THIRD batch of Gimme Some Oven Molasses cookies, and I had to have one warm smashed into ice cream. The best!

And they lived happily ever after Christmas!
