Green Lemonade Recipe (Leprechaun Lemonade)

This green lemonade is a deliciously simple way to celebrate St. Patrick’s day while getting a little good nutrition at the same time!

As I type this, we are starting to look at hunkering down in our area. Things are starting to get a bit crazy with everything going on in the world right now and I imagine that with kids staying home from school and parents having to stay home from work to care for them, things are about to get even crazier.

But in my experience, it’s best to keep things as normal as possible during difficult times. Especially for kids! So this delicious drink will help you celebrate St. Patrick’s day while giving your body a small amount of good nutrition at the same time, with minimal ingredients. The kids will love it!

WHAT IS GREEN LEMONADE?

Well, in this case, it’s lemonade that has spinach in it for coloring. But don’t worry, it tastes like lemonade! You will need a high powered blender, unless you don’t mind a few actual specks of spinach in your drink.

WHAT KIND OF BLENDER DO I NEED?

Any high powered blender will work here for a clear liquid. My two favorites are Ninja (more budget friendly) or a Vitamix (pricier, but great quality). If you don’t have one of these high powered blenders, you can still make this with one extra step. Blend everything as much as it will go, and then if you don’t want the specks of spinach in your drink, you’ll need to pour the lemonade through a fine-meshed sieve, and voila! A glass full of lucky lemonade!

Ingredients

  • 2 cups water
  • 1/4 cup lemon juice
  • 1/2 cup baby spinach leaves (up to 1 cup to adjust color as you like)
  • sweetener (as much as you like to taste - I used liquid stevia)

Instructions

  1. Place all ingredients in a high powered blender such as a Ninja or Vitamix.

  2. Blend until the liquid is green and there are no particles of spinach left visible.

  3. Child in the fridge, stirring occasionally to reduce the foam.
