Superfood Popsicles

Image
Superfood Popsicles I love to cool down on hot summer days with frozen treats like popsicles, but don’t buy most store-bought versions anymore because they’re packed with tons of added sugar, high fructose corn syrup, artificial colors, thickeners and fake flavors. I ate a TON of Bomb Pops when I was a kid… no wonder I had so many stomach aches back then! (FYI – Cellulose Gum has been linked to a variety of health issues – including intestinal inflammation).  Even those “Whole Fruit” and “Made With Real Fruit” bars are filled with added refined sugar , natural flavors , and emulsifiers like carrageenan … and despite all the pictures of fruit on the box, these are not real food.  Don’t waste your money on boxes full of chemicals like this, when it’s super easy to make frozen treats with healthy ingredients… even SUPERFOODS!  Here’s a great stainless steel popsicle mold to use (no plastic!) , all you need is some good healthy ingredients and you’ve ...

Dear Mark: When Nature is Stressful and How to Use Fish Sauce

Image
For today’s edition of Dear Mark , I’m answering a couple questions from readers. First, is nature always relaxing and blissful? Or are there instances where being in nature is far more stressful than being indoors? Why, and what should we do about it? Second, how do I use fish sauce , and how would a parent use fish sauce to get picky kids to try (and like) new foods? Let’s go: Kathy makes an important point: Don’t get me wrong, I love nature. But a walk in the New England woods at this time of the year is downright stressful. Between the tics, gnats, mosquitos, deer flys, and unrelenting humidity, I am content to be in my comfy, air conditioned, bugless home. Think I’ll just work on my strength exercises inside today. I grew up in New England, so I know exactly what you’re talking about.  Nature is beautiful and terrible. Where I live now, it’s beautiful. California nature is rather pleasant. It’s rarely hot or cold enough to threaten your life or even make you very uncom...

Are Mangoes Really the “King of Fruits?”

Image
So many “superfoods,” so little time. We know. But when the superfood in question is as juicy and pulpy-perfect as a mango (mmmm … mangoes), it’s worth paying attention.   Research suggests mangoes may have a variety of health benefits, including, according to two recent studies , partly funded by the National Mango Board conducted by researchers at Texas A&M University and Oklahoma State University, possibly reducing the risk of chronic inflammation and metabolic disorders.   “Eating mangoes provides the body with a wide variety of vitamins, minerals and antioxidants as well as dietary fiber,” says Emily Kyle, MS, RDN, owner of Emily Kyle Nutrition .   The fruits are packed with vitamins A and C and are a good source of vitamin B6, as well as the minerals potassium and magnesium, Kyle says. What’s more, she notes, the antioxidants in mangoes may offer protection against some cancers, including breast, colon and prostate.   Kyle, who was not involved wi...

99 White Balloons

Happy Monday! What did you do over the weekend? I love to imagine you all in your homes and towns and cities and countries (!) doing all kinds of fun things — farmers’ markets, weddings, parties, pools, beaches, gardens. On Friday I picked Mazen up from camp on my bike and he immediately got a flat tire! We were about a mile from home, but it was 100 degrees outside (literally) and that would have been a really hot walk for a 4.75 year old. I called a string of four to help us, and Sarah just happened to be nearby and gave Mazen a ride to the house while I biked home as fast as I could. On Friday evening we laid low and had a quiet night at home. We had plans to go to the pool, but big storms at 5pm postponed our plans. Should have gone because the rest of the night was great! I made a Cook Smarts chorizo dish and watched  Nashville . Topped with sour cream and avocado, this was delish! But let me tell you, this herb-butter chicken and succotash was the BEST Cook Smarts d...

Summer and desserts go hand in hand. Most of the time, dessert for me will be fruit. Most often, berries (my favorite!!). But every once in a while, I like to mix things up a little, and Mini Chef is… Read more → from The Gracious Pantry http://ift.tt/2vxop51

Salted Caramel Chocolate Chip Cookies

I have partnered with Dannon to help promote Oikos. I have been compensated for my time commitment to review Oikos.  However, my opinions are entirely my own and I have not been paid to publish positive comments. Thank you to Dannon for partnering with me on this blog post. These cookies are so, so, sooo delicious, and I hope that you love them as much as I do! As always, thank you for supporting CNC!  You guys know that I have quite the sweet tooth, but I’m all about balance too. I mean, hello, this blog is called Carrots ‘N’ Cake for a reason! I’ve tried to perfect the “better-for-you” cookie for years now, but, as you can imagine, there’s a fine line. A cookie should  taste  like a cookie, but if the ingredient combination is too healthy, it may not taste so great. Well, after lots of recipe testing, I found just the right combination! And, holy cow, it’s delicious! Salted caramel combines with sea salt to create a truly wonderful flavor combination. Add...
