Summer Fun & My New Favorite Pool Bag

^^What is Mazen’s tongue doing here!?! Here’s a little peek into our lives from yesterday : ) I had overnight oats made with cinnamon and blueberries for breakfast. Blueberries are so darn good right now! I took Mazey to camp, which is a half day this week. I worked on a Quaker recipe post for August (a tropical smoothie bowl that I can’t wait to share!) all morning. For lunch, Thomas surprised us with smoked salmon bagels from Bodos! I picked Mazen up after lunch and we went swimming at the Waterpark. And let me tell you about my new pool bag! My mom has a Scout bag as her beach bag and had me eyeing them while we were on Bald Head. These bags are all the rage on the island, but they were out of the largest version with all the pockets that I wanted in the shop there, so I had to order mine on Amazon when I got home. As much as CrossFitters claim to concern themselves primarily with increasing physical performance and work capacity across broad modal domains, they also want to lose body fat. Panko Okra + Other Green Things

I love okra! Although its texture is often named as a dislike, it’s actually my favorite part. The little bit of slime (for lack of a better word…) reminds me of chia seeds. Plus I love the okra flavor. My very old recipe for Better Than Fried Okra remains my favorite way to prepare the vegetable. Although sometimes I just grill or roast up a batch of whole pods and eat them like fries!  We brought home a huge box of leftovers from our dinner at Old City BBQ,  and I bought some okra to make as a side. Imagine my surprise when I realized we were all out of cornmeal! So I improvised and decided to try the recipe with panko instead. Turned out quite nice — and extra crunchy! Just like the old recipe , I dipped the okra pieces in egg mixed with a splash of milk, and then rolled them in the panko, which was first seasoned with pinches of smoked paprika, garlic powder, chili powder, and salt. Hi, guys! How’s it going? It’s been quite the whirlwind summer for us. We had three  back-to-back vacations, which, obviously, were a blast, but, whoa, we need a vacation from our vacations! If you have little kids, I feel like you totally know what I mean – staying up late, having a few cocktails, lots of laughs, but then waking up with the sun! Oy. Let’s just say, we had some FULL DAYS on vacation. Anywayyyyyyy, it’s time for the next edition of  What I’m Loving Lately ! I’ve missed a few weeks, so I have quite the round-up for you this morning! My Instant Pot – Omggggg, best purchase ever! I’m a little late to the Instant Pot craze, but it’s truly life-changing. It’s basically a fast crock-pot that works like magic. I made shredded chicken in 15 minutes and potatoes in 11!
