If you’re a long-time reader, you know just how much I love the flavor combination of chocolate + coconut + almond (i.e. No-Bake Almond Joy Cookies , Gluten-Free Almond Joy Cookies ), so, obviously, it was just a matter of time before I created an  Almond Joy Protein Ball recipe. This one is especially awesome because it works with a variety of protein powder flavors– chocolate, vanilla, or coconut– and turns out well every time! Enjoy! Ingredients : 4 Medjool dates 1 scoop (~ 20g) vanilla, chocolate, or coconut protein powder (all 3 flavors work – coconut is my fav!) 2 tbsp creamy almond butter 2 tbsp shredded coconut 2 tbsp chocolate chips 1 tbsp coconut oil, melted Directions : Combine ingredients in a bowl. Roll batter into 8 balls and place on parchment paper. Hi from Bald Head!! I’m here with my parents, my sister, and her husband for a week. We’re having a great time now that that tropical storm has passed. We’ve never stayed here for our beach week, (only for the spring, and the fall and for  my sister’s wedding ), so this is super exciting!! Look at that face!!! The house that we are renting is absolutely stunning – it’s recently been renovated and is the perfect floor plan for our family. On the first night, we arrived on the 6pm ferry, so we went straight to dinner at the Shoal’s Club. Luckily for us, it was ‘half price appetizer night’! We had one of everything on the menu, and everything was amazing! My favorite appetizer was these huge crab legs! Breakfast was a cinnamon chip bread with butter, coffee and blueberries.
